Our pizza is made with stoneground unbleached flour, organic extra virgin olive oil, sea salt and filtered water. We prove our dough for 48 hours in true artisan tradition.
We use organic tomato sauce, Italian fior di latte mozzarella and exceptional ingredients chosen for their authenticity and freshness such as San Daniele Prosciutto, Berkshire ham, organic vegetables and artisan cheeses.
We now make our own GLUTEN FREE pizza bases every day with wholegrain rice flour, millet, sorghum and potato flour.

Giorgio makes our artisan Gelato and Sorbetto every day in our Bondi Beach lab, integrating his innovative recipes, methods and techniques with the finest Italian Gelato making tradition.
All natural ingredients, no artificial colours, flavours or preservatives.
For our Gelato, biodynamic milk and house made caramel, Amedei chocolate, Bronte Sicilian pistacchio and Piemonte IGP hazelnuts.
For our Sorbetto, spring water and fresh organic and seasonal fruit showcasing what’s best at the market. Peach, fig, watermelon in summer. Blood orange, Granny Smith apple, Meyer lemon in winter.
